Pecan Chicken with Pecan Butter

 

Pecan Chicken

Ingredients:

Vegetable oil

Chicken breasts – thin sliced

Salt & pepper

1 cup flour

2 eggs – beaten with a splash of milk

1 cup bread crumbs (plain)

1 cup pecans – finely ground in food processor

½ tsp nutmeg

1 orange – zested

Directions:

Heat 1 1/2 to 2 inches of oil over medium high heat. Season chicken with salt and pepper. Set out 3 shallow dishes. Place flour in 1 dish, eggs beaten with milk in a second. In the third dish, combine bread crumbs with ground pecans, nutmeg and orange zest. Coat chicken in batches in flour, then egg, then bread crumb mixture. Fry chicken in small batches 6 to 7 minutes. Drain on paper towels.

 


Pecan Butter

Ingredients:

1 stick unsalted butter

¼ cup toasted pecans – finely chopped

5 tbsp maple syrup

pinch cinnamon – salt & pepper

Directions:

Combine in food processor.
