Semolina Bread
Ingredients:
For one loaf
1 1/2 cups room temperature water
1 tsp instant yeast
3 1/4 cups durum semolina flour
1 Tbs sugar
1/4 cup olive oil
1 1/2 teaspoons sea salt
Directions:
Put water, yeast, flour, sugar, olive oil and salt into mixer and beat on medium setting until smooth and shiny, about 8-10 minutes. If kneading by hand this should take about 10 - 12 minutes.
Move the dough into a container that has been lightly coated with oil. Cover. Let rise at room temperature until double; 1 1/2 to 2 hours.
Grease an 8 1/2 x 4 1/2 loaf pan with oil. Turn dough out onto a surface that has been dusted with semolina flour. Form loaf by folding over by thirds, pinch seams closed, and set into the pan seam side down. Dust top of the loaf with semolina flour, and cover with saran wrap. Let the loaf rise 1 to 1 1/2 hours, or until it rises above the top of the loaf pan.
15 minutes before baking preheat oven to 375 F.
Place the loaf pan on the middle rack of the oven. Bake 35 to 45 minutes, or until your bread is a deep golden brown.
